¾ c Chestnut Puree

2 t Grated Parmesan Cheese

2 Egg Yolks

1 t Grated Nutmeg

1 c All Purpose Flour

¼ c Chestnut Flour


Purchasing and Prep

To make the chestnut puree roast and puree chestnut and let hang overnight in cheesecloth over a bane.

Combine the chestnut puree, cheese, yolks, nutmeg and flours in a bowl and mix to combine. Roll into ½ inch strips and cut into ¾ inch lengths place on a well flour sheet tray lined with parchment wrap and refrigerate till use.
